Smoked Sausage and Peppers over Rigatoni
A couple of months ago I shared with you my new found love for eMeals along with the first recipe I’d tried from their weekly Family Classic Meal Plan (complete with recipes, a shopping list and coupons for the store you actually shop at). That recipe was the Roasted Lemon Garlic Chicken and it was a hit! I’ve served up many eMeals recipes since then. I made this last night and knew I had to share it! It’s absolutely delicious, not too spicy and an awesome change from the regular spaghetti and meat sauce or American Chop Suey I usually settle for in a pinch for time.
Smoked Sausage and Peppers over Rigatoni Recipe

Ingredients:
- 1 tablespoon vegetable oil
- 14 oz package smoked pork sausage, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 28 oz can crushed tomatoes
- 1 teaspoon Creole seasoning
- ½ teaspoon cayenne pepper
- ½ teaspoon dried thyme
- ¼ teaspoon salt
- 16 oz package rigatoni pasta
Directions:
Heat oil in a large skillet over medium-high heat. Add sausage, and cook 6 minutes or until browned, turning often. Add bell peppers, onion, and garlic; cook 6 minutes or until tender. Stir in tomatoes, Creole seasoning, cayenne pepper, thyme, and salt. Reduce heat to medium, and cook, stirring frequently, 5 minutes or until thoroughly heated. Cook pasta according to package directions. Serve sausage mixture over pasta.
Yummmmm! I love meals like this. Super easy and super delicious!
I make a meal quite similar to this, but omit the rigatoni for angel hair pasta. I like the heaviness of the sausage and sauce with the lightness of the angel hair. But no matter what the noodle, this recipe would taste delightful!
