I was in the mood for something sweet and super easy for dessert tonight. I was going to make lemon tea bread until remembered my daughter had a field day with the baking powder, baking soda and cornstarch one afternoon. So, I came up with these. Pretty great idea for a brunch. I made the Maple Chocolate Chip Muffins/Pancakes/Puffins at my son’s request. For the lemon, I mixed up 2 cups Complete Pancake Mix (the Just Add Water kind) with 1 Cup of water and 2 TBS lemon juice. For the glaze, I mixed lemon juice with powdered sugar until it was the consistency I wanted. Not as thrilled with those. Here’s the full recipe for the Maple Chocolate Chip Pancake Muffins! Enjoy!
