As promised last week when I made the Funfetti 7 cake, I made the Pineapple Fun Cake today. My husband adored it!
Simply mix one box cake mix with one can of crushed pineapples. I used pineapple chunks but minced them up a bit.
Mix and pour into greased pan. Bake according to the directions on the cake mix box. Remember, no egg, no oil!
I made mine as a layer cake and frosted it. The cake is great but was a little too sticky to be a layer cake, in my opinion. Oh well, the Hubs loved it anyway. If you want to make the Penuche frosting try this:
Melt one stick of butter in saucepan. Add 1/2 cup packed brown sugar. Bring to a boil and stir continuously for 2 minutes. Slowly stir in about an 1/8 Cup of milk. Return to boil. Remove from heat. Let cool to slightly warm temp. Soft in one cup of Confectioner’s Sugar beat on medium speed for about a minute. This frosting spreads VERY smooth and holds its shape quite well. Also, today we took the little guy sledding at a place called “The Bowl!” It’s pretty great and you can literally pick how steep you want to go depending on which place you start at. He had a blast!!!
