As promised last week when I made the Funfetti 7 cake, I made the Pineapple Fun Cake today. My husband adored it!

Simply mix one box cake mix with one can of crushed pineapples. I used pineapple chunks but minced them up a bit.

Mix and pour into greased pan. Bake according to the directions on the cake mix box. Remember, no egg, no oil!

I made mine as a layer cake and frosted it. The cake is great but was a little too sticky to be a layer cake, in my opinion. Oh well, the Hubs loved it anyway. If you want to make the Penuche frosting try this:

Melt one stick of butter in saucepan. Add 1/2 cup packed brown sugar. Bring to a boil and stir continuously for 2 minutes. Slowly stir in about an 1/8 Cup of milk. Return to boil. Remove from heat. Let cool to slightly warm temp. Soft in one cup of Confectioner’s Sugar beat on medium speed for about a minute. This frosting spreads VERY smooth and holds its shape quite well. (Recipe slightly altered from this one from In the Kitchen with Kath)

Also, today we took the little guy sledding at a place called “The Bowl!” It’s pretty great and you can literally pick how steep you want to go depending on which place you start at. He had a blast!!!
