Grilling is no longer restricted to hamburgers, hotdogs, steaks, and chicken anymore. You can grill almost anything nowadays, even desserts. Here’s a fabulous menu for a three-course grilled meal that needs no prep in your kitchen.

Shrimp

In a bowl, mix 1/2 cup of yogurt with 1 thinly sliced scallion, 1 chopped clove of garlic, 1/2 tablespoons of dill. Then stir in 1/2 cup of crumbled feta. Mash well. Season to taste. In another bowl, mix 3 chopped cloves of garlic, 1 1/2 tablespoons of dill, and 1/4 cup extra virgin olive oil. Add 2 pounds peeled and de-veined shrimp, and 2 lemons cut into 12 wedges. Season to taste. Thread shrimp. Grill over medium-hot fire for 5 minutes. Serve with feta sauce.

Appetizers on the Grill

The shrimp appetizers will set you and your guests up for the main entree of delicious double-smoked spiral ham. Get a 10-pound spiral ham and place it on a chicken rack, then place that on a baking tray. Some companies, like Smoke Baum, know that you should use cherry wood in your smoker. It’ll give the ham a wonderfully sweet flavor. Heat the smoker to 275 degrees F. Smoke until the internal temperature is 140 F, for about 2 hours. Look for moisture and a nice color.

For the glaze, use apple jelly and raspberry chipotle sauce. Your choice of how much. Warm a saucepan and add the apple jelly. After the jelly has broken down, add the sauce. Mix well. Leave on low heat until the ham is ready. Transfer ham to a shallow dish. Brush on the sauce. Smoke the ham for 30 more minutes. Take the ham out of the smoker and allow it to set for 10 minutes. Then carve along the spiral. Good eating.

Grilled Dessert

Fix up some mouth-watering campfire biscuit s’mores. Use a heavy-duty griddle with raised edges. Spread olive oil lightly over the griddle. Use a store bought biscuit mix. Pour together ingredients according to box directions. Scoop batter into 8 mounds on the griddle. Cook for 2 minutes on each side over low heat. Biscuits should be golden brown. Thread marshmallows on rosemary branches. Roast until golden and melted. Place on half of the biscuits. Add chocolate chips or chocolate bars. Place the other half of the biscuits on top.
