Vanilla Fudge with Almonds Recipe

Creamy, nutty fudge with a hint of vanilla is perfect for holiday occasions. I made it over the weekend in no time at all and everyone that tried it loved it! Typically, I’m a Peanut Butter Fudge kind of girl so I wasn’t sure how much I’d like this but it was super yummy!!! I mean, so freaking good. And, I burned off my piece serving “one more piece” to everyone a couple of times. It’s sweet so for me one or two pieces are plenty but some people quickly became like little Vanilla Fudge addicts and thought they’d need three or four pieces. To each their own! The recipe below makes  25 (1 square) servings. (Unless you are at my house- then it makes 5… Kidding!) Ingredients

  • 12 ounces white baking chocolate
  • 1 package (8 ounces) cream cheese, softened
  • 3 cups confectioners’ sugar
  • 1 tablespoon McCormick® Pure Vanilla Extract
  • 1/2 cup chopped toasted almonds

Directions

  1. Line an 8-inch square pan with foil, allowing foil to extend over sides of pan. Spray with no stick cooking spray.
  2. Melt chocolate as directed on package. Beat cream cheese in large bowl with electric mixer until smooth. Gradually beat in sugar on low speed until well blended. Add melted chocolate and vanilla; mix well. Stir in chopped almonds.
  3. Spread evenly in prepared pan. Garnish with whole almonds, if desired.
  4. Refrigerate at least 1 hour or until firm. Use foil to lift out of pan onto cutting board. Cut into 25 (1 1/2-inch) squares. Store in refrigerator. (Or under lock and key!)

  1. Fudge, nuts- right up my alley! I make fudge, and lots of it every holiday season. Typically good ole’ fashioned chocolate fudge, but I am also a fan of white fudge too- and this fudge looks divine! I might give this recipe a whirl to break my fudge making up a bit. Yummmm.

  2. This sounds delicious. I’m not into fudge it’ to sweet but I would certainly try this for our holiday celebrations.
