It might have been because it was the first day of school, I’m not sure, but on this past Wednesday I was sure of two things. One, that I wanted to make a hearty, delicious meal. And two, that I had no real time to cook that day. So, I did what any super hero mom would do, I pulled out the crock pot!

This thing is my life saver! I actually have three of them. Two large ones and one small one almost entirely dedicated to those little grape jelly cocktail weiners! Who wants the recipe for those? Also, one of my top three pins on Pinterest is Crockpot Stuffed Cabbage Casserole. It doesn’t even look overly appetizing but its delicious and so much easier than making stuffed cabbage rolls!

Anyway, back to my Crocka Cola Pot Roast. My punny attempts lately might be a little lame (ok, a lot). But this roast was to friggen die for! I had seen some recipes floating around on Facebook about Coke Roasts but I never saved them so I just kind of added a can of coke into what I’d normally add to my roast. With impressive results! It practically melts in your mouth. My husband was in awe. I was the suprehero mom for the night and I spent less than 10 minutes putting it together!

Now, if you are one of those people that just have to peel their potatoes- you can add some time there. But, my Dad grows my potatoes. I know where they come from, how they are grown and they basically go from the ground to the table in one-two days. I wash them well. That’s it.




Crocka Cola Pot Roast Recipe

1 Pot Roast- 2-3lbs
1 Can Coca Cola
1 Can Cream of Mushroom Soup
1 Envelope Onion Soup Mix
1lb baby carrots
10 Small New Potatoes- I like the Red ones.
Salt, pepper, minced garlic.

Wash veggies. Set aside. Mix coke, cream of mushroom soup and onion soup mix. Set aside.

Heat up a TBS oil in a skillet. Rub the roast with minced garlic, salt and pepper. The amount is entirely up to you!

Sear the roast on all sides. Place in crockpot. Add veggies. Pour cola and soup mix over everything.

Cook on high 4-5 hours or on low for 6-8 hours. Depends on your roast size and your crockpot.

  1. I’m definitely adding this to my have-no-time-but-still-hafta-get-dinner-on-the-table meal planner! Speaking of which, I’ve been waiting and waiting and waiting for Pot Roast to go on sale, which it hasn’t, but when it does I’m stocking up and making this recipe!

  2. Instead of envelope onion soup mix, did you mean onion gravy? I am going to make this tonight and wanted to be sure lol

      1. Any suggestions on a substitute for the cream of mushroom soup? We have a mushroom “hater” here…..

        1. Maybe cream of celery? Or skip it all together and use a thickening agent like cornstarch after you remove the meat to make a gravy from the broth.

    1. I usually judge based on when it’s “falling apart” when I put a fork in it. I think 6.5 hours is probably going to work but I might put it on high for the first half hour then turn it down to low. Good luck!

      I think that cream of chicken can be substituted but I’m not sure I’d want to use it. How do you feel about cream of celery? I’m just not sure about mixing the chicken with the beef. You could also try this-

      1 tbsp. butter
      3 tbsp. flour
      1/2 cup beef broth
      1/2 cup milk

      Melt butter in a saucepan on medium heat. Stir in flour, remove from heat. Add broth and milk slowly, stirring as you go. Then return to heat and bring to a boil stirring constantly until it thickens. This will make a nice condensed cream soup subsitution that you can use in this recipe in place of the can of cream of mushroom.

  4. Okay, your comment about your name is cracking me up… as you can imagine given MY first name:) Love anything in the crock pot and use mine a lot. Busy afternoons and cooking dinner are not compatible!
